
I was so excited for the opportunity to create this Summer Shaved Brussels Sprouts & Nectarine Salad for BOU, a bouillon company. I love to cook, but I rarely follow a recipe when I do. I like to kind of just go with what feels right lol, and think everyone should cook that way! This healthy summer recipe is so simple to throw together, but also lends itself easily to modifications if you want to add or remove something so that the recipe suits you better.
For example, if you want to swap the toasted walnuts out for candied or raw pecans, that would also be great. If you want to change the cheese from goat cheese to shaved parmesan, that would taste super yummy too! I had actually originally envisioned peaches in this recipe, but wasn’t able to find any so early in the season, so nectarines it became! I have to say though, I love how it turned out with the nectarines. But if peaches are more your style, swap in some grilled or roasted peaches! I also think adding avocado to this salad would be a nice addition.

This summer salad is a great dish to bring to a gathering because it really displays beautifully and is super unique I think. It can easily be made ahead of time as well, which is always helpful when entertaining at home or bringing a dish with you somewhere. I created it as a side dish, but you can also make it into an entree salad. Simply top it with sliced grilled steak {Marc and I did this the night I made this recipe} or, my favorite, grilled shrimp! I definitely plan to make this recipe often this summer since it is such an easy, healthy recipe as a simple side dish or light, healthy dinner.

If you want to make the recipe even simpler, you can pick up packaged shaved brussels sprouts. If you can’t find them pre-shaved though, it’s pretty simple to just slice them thinly and make your own. I also crumbled my own goat cheese from a log of cheese, but feel free to purchase pre-crumbled goat cheese to just pour in.
For the nectarines, you can simply slice around the pit. But, if you want to get the nice raw edge of the slices for presentation’s sake, you will have to be a little more fancy. Just slice the nectarine around the pit {similar to how you would cut an avocado} and then twist the halves until you can separate them and remove the pit. Then make your slices! 🙂
We live in a condo so aren’t allowed to have a grill, but this grill pan makes it so easy to grill right on the stove! I love the nice grill marks it makes on the nectarines, and the taste and texture is so much better than roasted in my opinion. Plus it makes it just feel extra summery when they are grilled.



Simple Summer Shaved Brussels Sprouts & Nectarine Salad

Method
- Preheat oven to 375 degrees.
- Mix the 2 BOU Roasted Garlic Seasoning Cubes with 1 cup of boiled water to make a marinade. Let cool slightly.
- Place shaved brussels sprouts in a large sealable plastic bag. Pour BOU marinade over brussels sprouts. Remove air from bag and seal. Gently shake the bag to cover Brussels sprouts in the marinade. Place bag laid flat in the refrigerator to marinate for at least 30 minutes, turning bag over midway through. {if possible, marinade for longer!}
- Line a baking sheet with aluminum foil. Spread walnuts in a single layer on the aluminum foil and bake in heated oven for 10 minutes.
- Spray or brush grill pan with olive oil to coat. Heat pan on medium high for about one minute. Place sliced nectarines on grill pan in single layer and grill for 3 minutes. Flip nectarine slices and grill other side for 3 minutes more. Remove nectarine slices from the heat. {alternatively you can grill nectarines on a traditional grill}
- Assemble your salad. Place marinated brussels sprouts in a large serving bowl {strain if needed}. Top with grilled nectarine slices, crumbled goat cheese, and toasted walnuts. Mix gently.
- Serve drizzled with prepared dressing & enjoy!
- Whisk ingredients together until well blended.
